Ingredients
  1. ⅓ cup pumpkin puree
  2. ⅓ cup maple syrup
  3. ¼ cup coconut oil, melted
  4. 3 eggs, whisked
  5. 1 teaspoon vanilla extract
  6. ¼ cup coconut flour
  7. ½ teaspoon cinnamon
  8. ¼ teaspoon nutmeg
  9. ⅛ teaspoon ground cloves
  10. ⅛ teaspoon powdered ginger
  11. ½ teaspoon baking soda
  12. ½ teaspoon baking powder
  13. pinch of salt
  14. ½ cup mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix together wet ingredients in a bowl: pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
  3. In another bowl, whisk together coconut flour, cinnamon, nutmeg, ground cloves, powdered ginger, baking soda, baking powder, and salt.
  4. Pour dry ingredients into wet ingredients and mix well.
  5. Fold in chocolate chips.
  6. Place 5 silicone baking cups on a cookie sheet for easy oven transfer.
  7. Use an ice cream scoop to scoop batter into silicone baking cups.
  8. Bake for 35-40 minutes.
